New January Menus

Here are my new menus for January - full of lovely seasonal ingredients. 

 

Canapés 

Chicken liver pate on brioche with balsamic shallots

Seared tuna with peanut and chilli 

Baked miniature potatoes with sour cream and chive

Softly boiled quails egg with sesame salt 

Seared sirloin with salsa verde on crostini 

 

Starters

Burrata with blood orange and coriander seeds

Jerusalem artichoke soup with hazelnut and spinach pesto

Pearl barley risotto with watercress and pecorino

Persimmon, hazelnut, goats cheese and chicory salad

Crab salad with fennel and orange

Salmon tartare with roast beetroot and beetroot crisps

 

Main

Pan fried Sea Bass in a tomato, garlic and ginger sauce with tenderstem broccoli and crusty ciabatta

Roast chicken breast with wild mushroom sauce, puy lentils and Cavalo Nero

Lamb rump with spinach and mint pesto, braised chicory, crispy new potatoes and redline sauce

Fillet of beef with anchovy brown butter, wild wilted greens and olive oil mash potato

Roast pork belly with butternut squash puree, apple and walnut salsa and curly kale

 

Pudding

Chocolate tart with tahini, mascarpone cream and sesame brittle

Gingerbread sponge with brandy apples and crème fraîche 

Lemon tart with softly whipped cream 

Rose and buttermilk panna cotta with poached pears

Coffee mousse with clotted cream and chocolate macarons
